Pineapple Jam
Bourbon Maple Syrup Glaze
Pecans, toasted and chopped
Powdered Sugar, as needed
Ice Cream (Optional)

Bourbon Maple Syrup Glaze

200g Cane Sugar
250g Maple Syrup
125g Confit Orange Syrup (if you don’t have, add more sugar)
1g Tahitian Vanilla Syrup
½ each Vanilla Bean (optional)
2 each Clove
⅛ stick Cinnamon
125g Bourbon (50% to start)
75g water

Preparation

Preheat the oven to 400°F and let bread thaw for a 5-10 minutes.
In a small sauce pot, add the pineapple jam and spiced bourbon glaze, bring to a gentle simmer, and add the toasted pecans.
Bake the luau roll in the oven for 1-2 minutes to warm and lightly toast. Remove from oven and let cool for a moment.
Pour the warm sticky rum glaze all over the bread. Garnish with the toasted & crushed pecans and chunks of pineapple (optional).
Serve with a scoop of ice cream (optional).

Bourbon Maple Syrup Glaze

Add all ingredients to a medium saucepan, but reserve 50% of the rum. Simmer for 5-10 minutes, then add the rest of the rum and simmer for 2-3 minutes.
