8 slices Artisan Jalapeño Cheddar Demi Loaf
Slow Roasted Pulled Pork
80g Avocado Smash

BBQ Birria Sauce

10 Ancho Peppers, seeded and stemless
8g Guajillo Peppers, seeded stemless
120g Onions Rings, charred
7g Garlic, whole
200g Tomato Roma, charred
30g Red Bell Peppers, charred
17g Pumpkin Seed
68g Beer
450g Water
10g Corn Tortilla, toasted
200g Ketchup
25g Worcestershire Sauce
100g Demerara Sugar
10g Salt

Preparation

Preheat the oven to 350°F, toast the slice of Euro-Bake Jalapeño Cheddar Loaf for 2-3 minutes.
*If using the whole loaf, preheat oven to 400°F. Meanwhile, let the loaf thaw for 20 minutes. Bake for 10-12 minutes.
Once toasted, spread on the avocado smash followed by the slow roasted pulled pork dressed in the BBQ Birria sauce.
Add the tomato slices, sprinkle on the Cotija cheese and cilantro.

BBQ Birria Sauce

Start by soaking the dry peppers in boil water for 30 min.
Place all the ingredients in an appropriate size stock pot. Bring all ingredients to a boil, then simmer for 1 hour. Remove from the stove and puree the sauce.
Return the sauce back to the heat and simmer for 20 minutes.
