Braised Greens & Egg Sandwich

Preparation

1. Prepare the sandwich.
   Start with brushing the Euro-Bake Portuguese Roll halves with butter or oil and toasting.
2. Prepare the egg to your preference.
   We recommend cooking it over-easy or over-medium for the added flavor of the runny yolk.
3. Assemble the sandwich.
   Layer bottom roll with pickled shallots, braised greens, crispy prosciutto, and egg, close with the top bun.

Pickled Shallots

1. Combine all ingredients in pot and heat until salt and sugar are completely dissolved, add shallot, and cool.
   Mix red wine vinegar, water, sugar, kosher salt, garlic cloves, bay leaf, thyme, black peppercorns, coriander seed and thinly sliced shallots.
2. Set aside until ready to use.

Braised Greens

1. Sauté shallot and garlic in oil.
2. Deglaze with lemon juice.
3. Add greens and season to taste with salt, pepper, and crushed red pepper.
4. Add chicken stock and simmer until tender, approximately 15 minutes.
5. Add tomatoes and sauté until heated through.
