Ingredients

Oktoberfest Pretzel Dogs

2 ea. Euro-Bake 7.5" Pretzel Stick
2 ea Bratwurst link (Pork & Veal Sausage)
2 ea Bauernwurst link(Smoked Pork & Beef Sausage)
Beer Braised Onions, as needed
Spicy Brown Mustard, as needed

Beer Braised Onions

50g Bacon, diced
500g Onion, ½” Petals
25g Garlic, sliced
20g Ap Flour
226g Hofbrauhaus Beer
500g Beef or Vegetable Stock
15g Dijon Mustard
20g Whole Grain Mustard
2g Salt

Preparation

Heat a large thick-bottomed pan (preferably cast-iron skillet). Add oil. Sear the bratwurst and bauernwust links on medium-high heat for about 3 minutes, flip using tongs, and cook on the other side for another 3 minutes.
Meanwhile, preheat the oven to 325°F for Euro-Bake 7.5" Pretzel Sticks.
Flip the sausages again, add beer, cover, and cook on low heat for about 10 minutes, flipping again halfway. The internal temperature should read 160°F. Remove bratwurst/bauernwurst.
When the oven is ready, bake the 7.5" Pretzel Sticks for 2-3 minutes. Remove from oven and let cool. Cut the pretzel sticks in half.
Spread spicy brown mustard on the inside of the baked pretzel sticks. Add bratwurst/bauernwurst cooked link and top with beer braised onions. Serve with extra spicy brown mustard on the side.

Beer Braised Onions

In a sauce pot slowly render the bacon for 2-3 minutes, add the onion and garlic and continue cooking for 3 minutes
Next, sprinkle over the flour and cook for one minute, then slowly stir in the cold beer to a boil.
Reduce to a simmer, add the beef stock, mustard and simmer for 20-25 minutes.
