Calabrian Roast Pork Cubano Recipe

Preparation

1. Preheat the oven to 350°F , toast the Euro-Bake Cuban Bread for 3 - 5 minutes.
2. Spread basil mayonnaise and mustard on the inside of the Cuban Bread.
3. Next add a layer of sharp provolone, sliced pork shoulder, giardiniera mojo, and top with the arugula.
4. Transfer to a board and cut sandwich into half or quarters.

Calabrian Giardiniera Mojo

1. Combine all ingredients together and mix thoroughly.

Basil Mayo

1. Combine all ingredients together in a mixer, and mix thoroughly to preferred taste.

Calabrian-Style Roasted Pork

1. Season the pork with salt.
2. Place the rest of the ingredients into a blender and blend, pour the marinade on to the pork. Allow to marinate for 1 - 2 hours before cooking.
3. Remove the pork from the marinade and lightly pat dry. Preheat the oven to 450°F and bring the pork to room temperature while the oven heats.
4. Place the pork in a shallow roasting pan and roast, uncovered, for 30 minutes, until the top starts to brown a bit.
5. Turn the heat down to 250°F and continue to cook, uncovered, for 6 to 8 hours until the middle of the roast registers 180°F. on an internal thermometer, and as you slide the thermometer in you can feel that the meat is very tender throughout.
