Mushroom Sauce

  • 60g Bacon, diced
  • 50g Onion, small diced
  •  20g Garlic, minced
  • 30g Grapeseed Oil
  • 300g Mushroom, sliced
  • 40g Porcini Mushrooms, rehydrated
  • 40g Flour
  •  200g Beer
  • 1000g Beef Stock
  • 5g Tomato Paste
  • 35g Dijon Mustard
  • 3g Thyme
  • 8g Cabernet Vinegar
  • Potato Starch or Corn starch if needed to be thicker

Grüne Soße (Sosse)

  • 150g green herbs (borage, chervil, cress, parsley, burnet, sorrel and chives)
  • 150 g creme fraiche or sour cream
  • 150 g full fat yogurt
  • 1 small onion (about 50g)
  • 1 teaspoon mustard
